So this needs to undergo more processing, and it will lead to reducing the flavor.

Olive oil contains a high amount of mono-saturated fats, such as oleic acid, palmitic acid, and linoleic acid, which enables with anti-inflammatory and heart health benefits. Vegetable oil has omega-6 polyunsaturated fats mostly. The problem of this is that polyunsaturated fats have harmful properties of olive oil. Excessive consumption of this may cause, pro-inflammatory and heart problems.
Extra virgin olive oil is high in antioxidants, and anti-inflammatory compounds like, carotenoids, polyphenol, and tocopherol since this undergoes less process. And also, minimally refined olive oil has vitamin K and E.
Refining process of vegetable oil may destroy the micronutrients, antioxidants, and healthy plant
compounds. So, lots of processing to blend several types of pf plant oils will neutralize the flavour and reduce the beneficial nutrients while keeping unhealthy calories.
Studies have found that cognitive function of adults may improve by replacing extra virgin olive oil instead of vegetable oil.
What are the similarities of these oils?
The main similarity of these two oils is, both of them are plant oils. Further, both olive and vegetable oil have the same smoke points around 4000F. The smoke point is the temperature that can heat before its fat begins to breakdown to glycerol and free fatty acids.
There are some kinds of olive oil which undergoes in massive processing techniques. Pomace oil comes under this category. So, this type of olive oil has fewer micro nutrients and lack of characteristic flavor than virgin olive oil.
Main differences between olive and vegetable oil
Source of the olive oil is processed oil while Vegetable oil has made by blending fats from multiple plant sources. Olive oil is high in antioxidants since of less processing. But vegetable oil has a lack of antioxidants due to increased processing. You can use olive oil for salad dressings, and to drip bread. On the other side vegetable oil mainly uses for baking and frying foods.
